Ingredients

  • FOR THE SYRUP
  • 1 1/4 cups water
  • 1 1/4 cups sugar
  • 1 tablespoon lemon juice
  • FOR THE CAKE
  • 2 cups semolina
  • 1/2 cup sugar
  • 3/4 cup butter, melted
  • 1/4 cup syrup
  • 1 cup heavy cream, warmed

How To Make semolina cake (bassboossa)

  • Step 1
    For the syrup: in a saucepan dissolve the sugar in the water over medium heat then add the lemon juice. Bring to boil then let it boil softly for 5 minutes. Set aside to cool.
  • Step 2
    Preheat oven to 350 degrees, position rack in center of oven. Spray a 9 inch pan with cooking spray. In a bowl, mix semolina and sugar together. Melt the butter and add it to the mixture and mix well till all semolina is moistened.
  • Step 3
    Add 1/4 cup cooled syrup, and the cream. Using a spoon, mix all ingredients together thoroughly. Spread batter into the prepared pan and smooth the top with the back of a spoon or moistened hand. Bake at 325 degrees for 40 - 50 minutes or till the top is dark golden brown and the edges are browned.
  • Step 4
    Take out of the oven and immediately pour the cool syrup all over. Cool completely before cutting into squares. Serve with a dollop of cream (optional).
