heres a good diabetic recipe of mine for the holidays merry christmas!

Ingredients

  • 2 cups water
  • 1 cup reduced-calorie margerine
  • 15 ounces raisins
  • - sugar substitute for one cup sugar
  • 2 teaspoons baking soda
  • 1/4 cup warm water
  • 2 - eggs beaten
  • 41/2 cups all-purpose flour
  • 1 teaspoon ground cloves
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • - vegetable cooking spray

How To Make raisin cake

  • Step 1
    Bring 2 cups water to a boil in a large saucepan; stir in margarine and raisins, and boil, uncovered 5 minutes. remove from heat, and cool raisin mixture to lukewarm, stir in sugar substitute. Dissolve soda in 1/4 cup warm water; add to raisin mixture, stirring well. stir in eggs.
  • Step 2
    Combine flour, cloves,allspice,cinnamon, and baking powder; gradually add to raisin mixture, stirring after each addition.
  • Step 3
    spoon batter into 10-inch bundt pan coated with cooking spray. bake at 375 degrees f for 1 hour or until a pick comes out clean. cool cake 12 minutes then remove from pan. add a large spoon cool whip on top for serving ummmmmm
