Ingredients
- 2 cups flour
- 1-1/4 cup light brown sugar, packed
- 1 tablespoon pumpkin pie spice
- 2 teaspoons baking soda
- 2 cups shredded carrots
- 1 cup flaked coconut
- 1/2 cup chopped walnuts
- 3 - eggs, beaten
- 1 cup canola or coconut oil
- 1/2 teaspoon vanilla
How To Make pumpkin spiced carrot muffins

Step 1Heat oven to 375. Spray muffin cups w/ cooking spray. In lg bowl, combine flour, brown sugar, pumpkin spice and baking soda.

Step 2In another lg bowl, combine remaining ingredients, mix well. Add carrot mix to flour mix, stir until combined.

Step 3Spoon mix evenly into muffin cups. Bake 15-20 mins or until a toothpick inserted in center of muffin comes out clean.
