These muffins, spiced w/ pumpkin are great for your morning coffee or as a snack. You can serve them as is, or make a cream cheese frosting for them.

pumpkin pie spice
2 tsp
baking soda
2 c
shredded carrots
1 c
flaked coconut
1/2 c
chopped walnuts
eggs, beaten
1 c
canola or coconut oil
1/2 tsp

How to Make Pumpkin spiced carrot muffins


  • 1Heat oven to 375. Spray muffin cups w/ cooking spray. In lg bowl, combine flour, brown sugar, pumpkin spice and baking soda.
  • 2In another lg bowl, combine remaining ingredients, mix well. Add carrot mix to flour mix, stir until combined.
  • 3Spoon mix evenly into muffin cups. Bake 15-20 mins or until a toothpick inserted in center of muffin comes out clean.
