it's a sin! chocolate cake with fudge icing

One summer several years ago my mom held a 4th of July potluck at her house. Her friend, Liz Hayes, brought this AMAZING chocolate cake that I immediately named "Sin Cake". The fudge icing is perfect, and begs for you to get another slice just to make sure it was really as good as you thought it was. It is so rich and yummy and washes done beautifully with cold milk. I promise, you'll be making this one again and again.

Ingredients

  • FOR THE CAKE:
  • 1 cup water
  • 1 cup butter
  • 1/2 cup crisco, butter-flavored
  • 4 tablespoons cocoa powder
  • FOR THE CAKE (DRY INGREDIENTS)
  • 2 cups flour
  • 2 cups sugar
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup buttermilk
  • 2 - eggs, beaten
  • 1 teaspoon vanilla
  • FOR THE ICING:
  • 1 1/2 cups sugar
  • 1/2 cup butter
  • 3 1/2 tablespoons cocoa powder
  • 1/2 cup water
  • 1 teaspoon vanilla ***add this after the sugar, butter, cocoa and water have come to soft-ball stage

How To Make it's a sin! chocolate cake with fudge icing

  • Step 1
    Bring to a boil the first four ingredients.
  • Step 2
    Mix together the flour, sugar, salt and baking soda.
  • Step 3
    Put hot ingredients into dry ingredients and mix well. Then add in the buttermilk, eggs and vanilla.
  • Step 4
    Pour batter into a greased and floured cake pan. Bake at 350 degrees F for 40-45 minutes or until done. Allow to cool before icing.
  • Step 5
    Bring all icing ingredients EXCEPT the vanilla to boil. Boil for 5 minutes or until icing is at the soft ball stage. Remove from heat and stir in the vanilla. Pour over the cooled cake.
  • Step 6
    Note: Can add pecans or walnuts or even raspberries if you really want to be decadent. I've thought about exploring using dark cocoa but haven't tried it yet.
