Ingredients

  • 2 c
    flour
  • 2 tsp
    baking soda
  • 2 tsp
    cinnamon
  • 1 tsp
    salt
  • 2 c
    sugar
  • 4
    eggs
  • 1 1/4 c
    oil
  • 2 c
    finely grated carrots
  • ICING:

  • 1
    8 oz. pkg. cream cheese
  • 1 stick
    butter
  • 1 box
    powdered sugar
  • 1 tsp
    vanilla (optional)
  • 1 c
    chopped nuts (optional)

How to Make Carrot Cake

Step-by-Step

  1. Sift dry ingredients together. Mix eggs, cooking oil and carrots together and add to dry ingredients. Beat hard. Bake in 2 layer pans at 350 degrees for 45 minutes.
  2. Icing: Cream butter and cream cheese with electric mixer. Add sugar gradually. Add vanilla for better consistency of icing. Blend in nuts and spread on cake.
  3. Note: nuts (pecans or walnuts) may be added to cake batter in addition to nuts sprinkled over the cake icing. Other variations to include are drained pineapple, bananas, dates, etc.
