Ingredients
- 2 cups flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 teaspoon salt
- 2 cups sugar
- 4 - eggs
- 1 1/4 cups oil
- 2 cups finely grated carrots
- ICING:
- 1 - 8 oz. pkg. cream cheese
- 1 stick butter
- 1 box powdered sugar
- 1 teaspoon vanilla (optional)
- 1 cup chopped nuts (optional)
How To Make carrot cake

Step 1Sift dry ingredients together. Mix eggs, cooking oil and carrots together and add to dry ingredients. Beat hard. Bake in 2 layer pans at 350 degrees for 45 minutes.

Step 2Icing: Cream butter and cream cheese with electric mixer. Add sugar gradually. Add vanilla for better consistency of icing. Blend in nuts and spread on cake.

Step 3Note: nuts (pecans or walnuts) may be added to cake batter in addition to nuts sprinkled over the cake icing. Other variations to include are drained pineapple, bananas, dates, etc.
