My poor auntie, always on a diet, came up with this delicious bread that's very cake-like.

Ingredients

  • 1-1/4 c
    whole wheat flour
  • 2-1/2 tsp
    baking powder
  • 1/8 tsp
    salt
  • 1-1/2 tsp
    cinnamon
  • 1/2 c
    light brown sugar
  • 3/4 c
    raisins
  • 4
    carrots, peeled and shredded
  • 2 large
    eggs
  • 1 Tbsp
    oil, i used canola
  • 1/2 c
    powdered sugar
  • 3 Tbsp
    fat-free milk

How to Make Auntie's low-fat carrot cake bread

Step-by-Step

  1. Heat oven to 325. Line loaf pan w/ parchment paper, lightly spray paper w/ cooking spray.
  2. In lg bowl, whisk together flour, baking powder, salt and cinnamon. Stir in brown sugar, raisins, carrot, eggs and oil.
  3. Mix well. Spoon into pan. Bake 1 hr, or until a toothpick inserted in center comes out clean. I would check it at 50 mins to be sure. Cool. Peel off parchment paper. In small bowl, whisk together powdered sugar and milk until smooth. Drizzle over bread.
