My poor auntie, always on a diet, came up with this delicious bread that's very cake-like. Calories: 150 Fat: 23 grmas. Carbs: 32 grams

Ingredients

  • 1-1/4 cup whole wheat flour
  • 2-1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1-1/2 teaspoon cinnamon
  • 1/2 cup light brown sugar
  • 3/4 cup raisins
  • 4 - carrots, peeled and shredded
  • 2 large eggs
  • 1 tablespoon oil, i used canola
  • 1/2 cup powdered sugar
  • 3 tablespoons fat-free milk

How To Make auntie's low-fat carrot cake bread

  • Step 1
    Heat oven to 325. Line loaf pan w/ parchment paper, lightly spray paper w/ cooking spray.
  • Step 2
    In lg bowl, whisk together flour, baking powder, salt and cinnamon. Stir in brown sugar, raisins, carrot, eggs and oil.
  • Step 3
    Mix well. Spoon into pan. Bake 1 hr, or until a toothpick inserted in center comes out clean. I would check it at 50 mins to be sure. Cool. Peel off parchment paper. In small bowl, whisk together powdered sugar and milk until smooth. Drizzle over bread.
