Ingredients
- 1-1/4 cup whole wheat flour
- 2-1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 1-1/2 teaspoon cinnamon
- 1/2 cup light brown sugar
- 3/4 cup raisins
- 4 - carrots, peeled and shredded
- 2 large eggs
- 1 tablespoon oil, i used canola
- 1/2 cup powdered sugar
- 3 tablespoons fat-free milk
How To Make auntie's low-fat carrot cake bread

Step 1Heat oven to 325. Line loaf pan w/ parchment paper, lightly spray paper w/ cooking spray.

Step 2In lg bowl, whisk together flour, baking powder, salt and cinnamon. Stir in brown sugar, raisins, carrot, eggs and oil.

Step 3Mix well. Spoon into pan. Bake 1 hr, or until a toothpick inserted in center comes out clean. I would check it at 50 mins to be sure. Cool. Peel off parchment paper. In small bowl, whisk together powdered sugar and milk until smooth. Drizzle over bread.
