sweet potato cookies with orange spice frosting

What a great way to welcome autumn! We loved these cookies. I even let my boys have one for a breakfast treat the next morning. I mean, what's the harm? They have healthy cream of wheat, whole grains, sweet potatoes, molasses, and orange. A little, heart healthy spoiling goes a long way! Bon appetit!

Ingredients

  • COOKIES
  • 2 - sweet potatoes, large
  • - orange juice, fresh
  • 2 cups ultragrain flour or whole grain flour
  • 1 cup dark brown sugar
  • 1 tablespoon dark molasses
  • 1 tablespoon vanilla
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1 tablespoon pumpkin pie spices
  • 1 - egg
  • 2 tablespoons cream of wheat
  • 1 stick butter
  • - cream, optional
  • - confectioners' sugar
  • "FROSTING"
  • - reserved sweet potato mash
  • - confectioners' sugar
  • - pumpkin pie spices, optionally
  • - orange zest, optionally

How To Make sweet potato cookies with orange spice frosting

  • Step 1
    Peel, dice, and boil sweet potatoes until soft.
  • Step 2
    Place in bowl. Pour in enough orange juice to mash to a smooth, but not liquidy consistency.
  • Step 3
    In a separate bowl, beat brown sugar and butter until fluffy.
  • Step 4
    Then add in egg and beat for a minute.
  • Step 5
    Add molasses and vanilla and beat for another minute. Set aside.
  • Step 6
    Add two thirds of your orange sweet potato mash to your mixture. Combine well.
  • Step 7
    In a separate mixing bowl, add flour, salt, baking powder, pumpkin spice, and cream of wheat (dry, uncooked). Mix with a fork, then double sift.
  • Step 8
    Add dry to wet. Depending on the size of your sweet potatoes, add a tablespoon or two of cream to make a moist batter. You may skip altogether. Beat for 2 minutes.
  • Step 9
    Place in refrigerator or freezer. I like to freeze mine for 30 minutes.
  • Step 10
    Grease a cookie sheet. Make a ball of batter, then roll in confectioners' sugar. Place on cookie sheet and slightly press down.
  • Step 11
    Bake at 350F for about 8 minutes or until center is set. These are cake cookies, so a soft center.
  • Step 12
    To make "frosting", mix a ratio of 2/3 orange sweet potato mash to 1/3 confectioners' sugar. Optionally, add pumpkin pie spice and orange zest to your taste.
  • Step 13
    Spoon on cookie and spread to rim. Optionally sprinkle with more confectioners' sugar.
