These cookies are totally addictive. I dare you to make a plate of these yummy morsels, and eat only one… I double-dare ya. These cookies began in a small bistro. I was having afternoon tea, and a lady came by with some freshly baked goodies. Well, all I can say is that it was love at first bite. Unfortunately, the recipe was not forthcoming (a closely guarded secret), so it was into the test kitchen I went. So, you ready… Let’s get into the kitchen.

Ingredients For sweet essentials: chocolate lace cookies

  • PLAN/PURCHASE
  • 1 c
    almond flour
  • 1 c
    coconut sugar
  • 1 tsp
    baking soda
  • 1 tsp
    arrowroot powder
  • 2 Tbsp
    unsweetened cacao powder
  • 1/2 tsp
    sea salt, coarse
  • 3 Tbsp
    maple syrup, or honey
  • 2 Tbsp
    coconut butter
  • 4 Tbsp
    coconut oil
  • 1/2 tsp
    vanilla extract, or paste
  • 1/2 c
    dark chocolate morsels

How To Make sweet essentials: chocolate lace cookies

    PREP/PREPARE

    Gather your ingredients.

    Place a rack in the middle position, and preheat the oven to 375f (190c).

    Get yourself a nice large bowl, and add the almond flour, coconut sugar, baking soda, arrowroot, and cacao powder.

    Use a whisk or wooden spoon to thoroughly mix all the ingredients.

    Add the maple syrup (or honey), coconut butter, coconut oil, and vanilla extract, and mix together.

    Chef's Tip: To ensure even mixing of the liquid ingredients with the dry, I recommend first whisking together all the liquid ingredients before adding to the dry.

    Finally, fold in the chocolate morsels.

    Lay the dough on a generous piece of cling wrap.

    Roll into a tight cylinder.

    Place, tightly wrapped, into the fridge for a minimum of 2 hours.

    Cut off 1/2-inch thick (1.3cm) of the cooled dough and place on a parchment-lined baking sheet.

    Chef's Note: These cookies will really spread out when cooking, so give them about twice as much space between cookies, as you see in the previous photo.

    Bake in the preheated oven until spread out, and slightly browned, about 5 – 7 minutes.
