- 1 cup almond butter (peanut butter made from almonds)
- 1 large farm-fresh egg, room temperature
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 pinch ground cinnamon
- ADDITIONAL ITEMS
- - fresh clover honey, for drizzling

Step 2In my opinion, a drizzle of fresh clover honey is an essential part of this recipe.

Step 3Gather your Ingredients (mise en place).

Step 4Place a rack in the middle position, and preheat the oven to 350f (175c).

Step 5Mix all the ingredients together, and then place tablespoon amounts on a parchment-lined baking sheet.

Step 6Chef’s Note: The batter will spread out, and they will expand as they bake, so give each cookie a generous amount of space. On a full-sized baking sheet, you should have room for about 8 cookies.

Step 7Place the cookies in the preheated oven, and bake for 9 – 11 minutes.
