Please note: these lovely cookies are not overly sweet. The raisins and sweet lemon syrup help to sweeten these tasty treats. The ground walnuts add another layer of flavor and a nice texture to the cookies.

Ingredients
- 1 cup vegetable or virgin olive oil
- 1/2 cup fresh squeezed orange juice
- 1 teaspoon pure vanilla extract
- 3 cups flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 2 tablespoons white sugar
- 1/2 - 3/4 cups raisins
- SYRUP
- 1 cup sugar
- 2 cups water
- 1 - 2 teaspoons lemon juice
How To Make raisin cookies

Step 1Preheat oven to 350 F.

Step 2Cookies: In a large bowl add orange juice, oil and vanilla extract. In another bowl, add the dry ingredients and mix well. Now, slowly add the orange juice mixture to the flour mixture until a soft, moist dough forms. If necessary add more flour.

Step 3To assemble, press some of the raisins into the middle of the dough and roll into 1 1/2 inch balls.

Step 4Place the cookies on a sheet and bake in a 350 oven for 20 - 25 minutes.

Step 5Syrup: In a small pot add all the syrup ingredients. Bring to a rapid boil and boil until it thickens into a syrup. Dip the cooled cookies into the syrup. Next, press the top of the cookie into the ground walnuts, and let dry on a rack. Enjoy
