quick iced oatmeal cookies

I've been making these cookies since my daughter was a little girl, ( many years ago, lol,) I had gotten the original recipe from a Better Homes and Garden cookbook my aunt had given me. Over the yrs, I have made changes and this is the best recipe so far.

Ingredients

  • 1 stick plus 6 tbsp soft butter
  • 2 large eggs
  • 1 cup light brown sugar
  • 1/2 cup white sugar
  • 1 teaspoon vanilla extract
  • 1-1/2 cup all purpose flour
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1-1/2 teaspoon ground cinnamon
  • 3 cups quick cooking oatmeal, i used quaker brand
  • 1 cup sun maid raisins
  • 1 can cream cheese frosting

How To Make quick iced oatmeal cookies

  • Step 1
    Heat oven to 350. Line cookie sheets w/ parchment paper. In a large bowl, beat butter and both sugars until creamy. Beat in eggs and vanilla.
  • Step 2
    In another bowl, whisk together the flour, baking soda, salt and cinnamon. Slowly pour the flour mix into egg mix and beat just until combined,
  • Step 3
    Add the quick cook oats and raisins into the mix and with clean hands mix it up real good. Using a tablespoon, scoop up the mix by tbsp and shape into rounds. Set them on the paper, 2" apart. Bake for 8-10 minutes or until very light golden brown. Watch very carefully since they can burn easy. :let cool. I spoon 1/2 the frosting into a microwave safe bowl, microwave 10 seconds or until just a little melted. Spoon over the cookies. Let set.
