peanut butter cup cookies

These are on my Christmas cookie tray every year. Everyone loves them,and they are easy to make. The only hard part is not eating the peanut butter cups when you have to unwap them.

Ingredients

  • 1/2 cup creamy peanut butter
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/2 teaspoon vanilla
  • 1 1/4 cups flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 10 ounces bag minature peanut butter cups

How To Make peanut butter cup cookies

  • Step 1
    Line muffin cups with paper cupcake liners, it will make removing these easier even while warm. The recipe makes about 27 or so cookies.
  • Step 2
    Cream butter, sugars, then add egg, vanilla
  • Step 3
    Stir together flour, baking soda and salt, then stir into creamed mixture.
  • Step 4
    Use a disher that would measure out maybe a 1 inch ball. You could make balls. This particular one is about 1 1/4 inches across, quite small. I get about 27 cookies with this size disher
  • Step 5
    Bake in a preheated 375 degree oven for 8 to 12 minutes, or until lightly browned.
  • Step 6
    Immediately on taking out, press a minature peanut butter cup in the middle.
