oat pulp cookies
The other day I made my first oat milk. It was delicious. But it left behind a 1/2 cup of pulp. The original recipe said to use in bread or oatmeal. I was making neither. But I make cookies every 2-3 days so I simply created a recipe to use it. I loved them they are light like angel wings and tasted amazing. Eric on the other hand likes seeds in his cookies so he wasn't as happy. So try them and let me know what you think. I am definitely making these again. maybe adding seeds to his half.

Ingredients
- MIX IN A BOWL BEATING WELL
- 1/2 cup pulp from making oat milk (no liquid)
- 1 stick butter (1/2 cup)
- 1/2 cup sugar
- 1/2 teaspoon cinnamon, ground
- 1 teaspoon vanilla
- 1 large egg
- 1/2 teaspoon salt
- 1 1/4 teaspoons baking powder
- THEN ADD
- 1 1/4 cups flour
- 1/2 cup white chocolate chips
- 1/3 cup raisins

Step 1First you need to make the oat milk below and after strain9ing it you should have just about 1/2 cup pulp, to use in this recipe. Preheat oven to 350 degrees

Step 2In a bowl add egg, sugar, oat pulp, cinnamon, butter, salt baking powder,and vanilla. mix well. Then add the flour, raisins, and white chocolate chips. Drop by spoonfuls onto a cookie sheet and bake for 10-12 minutes.
