Buttery, Flaky and Lemony - these cookies are a delight.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1/8 teaspoon salt
  • 1/2 cup unsalted butter, room temp
  • 1/2 cup granulated sugar
  • 1/2 - vanilla bean, split and scraped
  • 1 1/2 teaspoons freshly grated lemon zest
  • 1 - egg
  • - sprinkles for topping

How To Make lemon cookies

  • Step 1
    Combine dry ingredients (flour through salt) in a large bowl. In a separate bowl, mix with an electric mixer, butter, sugar, vanilla and lemon zest. Add the egg and continue mixing until combined.
  • Step 2
    Add dry ingredients to the butter mixture and mix until just combined.
  • Step 3
    Place the dough in a sheet of plastic wrap and form into a disc. Freeze cookie dough for 30-45 minutes or until dough is hard.
  • Step 4
    Preheat oven to 350 degrees and line two baking sheets with parchment paper. Once the dough is hard, break off 1/2 of the dough, wrap in plastic wrap and refrigerate. Roll the first portion of the dough until thin (the dough is very buttery -- dust with enough flour to handle)
  • Step 5
    Dip cookie cutter in flour and cut out cookies and place them on the parchment lined cookie sheets. Decorate them generously with sprinkles. Repeat with remaining dough.
  • Step 6
    Bake 6-7 minutes or until cookies are golden. Let cookies cool completely on a wire rack.
