chocolate chip ice cream sandwiches
I have been making chocolate chip cookies for a while. I had a major sweet tooth on a hot day. I wanted to serve Ice cream on the side. Then it hit me. It would be easier if i make them into sandwiches. Everyone in my house hold loves them. They are really easy to make.

Ingredients
- 1/2 cup shortening
- 1/4 cup white sugar
- 1/2 cup brown sugar, firmly packed
- 1 - egg
- 1/2 teaspoon vanilla extract
- 1 1/8 cups all purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 - 1 1/2 cups semi-sweet chocolate chips mini's
- 1 pint ice cream of your choice (vanilla is used in this recipe)

Step 1Preheat oven to 350 degrees F (175 degrees C).

Step 2In a medium bowl, cream together shortening, brown sugar and white sugar. Mix in the egg and vanilla. Combine the flour, baking soda and salt; stir into the batter until moistened. Mix in the chocolate chips. Drop by heaping spoonfuls onto greased cookie sheets. (I roll them into balls and press down with three fingers to make them thick but still keep their form.)

Step 3Bake for 8-10 minutes, until the edges are light brown. Make sure you do not over cook them. You want them a little soft so the flavor of the ice cream can mix in. Allow the cookies to cool. Take the ice cream out to soften mean while.

Step 4This step you need to be fast. Line a small cookie sheet with wax paper. With an ice cream scoop, scoop out one serving to two servings of ice cream onto a cookie. Top off with another cookie. Repeat until they are used up. Immediately freeze. Take out when ready to serve.
