brown sugar coconut cookies

I just love coconut cookies and this is another recipe I adopted. They sound yummy.

Ingredients

  • 1 cup butter
  • 1 cup firmly packed brown sugar
  • 2/3 cup granulated sugar
  • 2 - eggs
  • 1/4 cup milk
  • 1 tablespoon vanilla
  • 1 package vanilla flavor instant pudding (4 serving size)
  • 3/4 cup whole wheat flour
  • 1/2 cup quick oats, uncooked
  • 1/2 cup flaked coconut
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup quick oats, uncooked
  • 1 cup semi-sweet mini chocloate chips
  • 1 cup chopped pecans

How To Make brown sugar coconut cookies

  • Step 1
    Heat oven to 325 degrees.
  • Step 2
    Combine butter, brown sugar and granulated sugar in large bowl.
  • Step 3
    Beat at low speed of electric mixer until well blended.
  • Step 4
    Add, one at a time, eggs, milk and vanilla.
  • Step 5
    Mix well after each addition and beat in pudding mix just until blended.
  • Step 6
    Add flour, 1/2 cup quick oats, coconut, baking soda and salt.
  • Step 7
    Mix until blended.
  • Step 8
    Stir in 1 cup oats, regular and mini chocolate chips, butterscotch chips and nuts with spoon.
  • Step 9
    Drop by rounded teaspoonfuls onto ungreased baking sheet.
  • Step 10
    Bake at 325 for 7 to 9 minutes or until golden brown around edges and slightly moist in center.
  • Step 11
    Cool 3 to 5 minutes before removing to paper towels.
