I just love coconut cookies and this is another recipe I adopted. They sound yummy.

Ingredients

  • 1 c
    butter
  • 1 c
    firmly packed brown sugar
  • 2/3 c
    granulated sugar
  • 2
    eggs
  • 1/4 c
    milk
  • 1 Tbsp
    vanilla
  • 1 pkg
    vanilla flavor instant pudding (4 serving size)
  • 3/4 c
    whole wheat flour
  • 1/2 c
    quick oats, uncooked
  • 1/2 c
    flaked coconut
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 c
    quick oats, uncooked
  • 1 c
    semi-sweet mini chocloate chips
  • 1 c
    chopped pecans

How to Make Brown Sugar Coconut Cookies

Step-by-Step

  1. Heat oven to 325 degrees.
  2. Combine butter, brown sugar and
    granulated sugar in large bowl.
  3. Beat at low speed of electric mixer until well blended.
  4. Add, one at a time, eggs, milk and vanilla.
  5. Mix well after each addition and beat in pudding mix just until blended.
  6. Add flour, 1/2 cup quick oats, coconut, baking soda and salt.
  7. Mix until blended.
  8. Stir in 1 cup oats, regular and mini chocolate chips, butterscotch chips and nuts with spoon.
  9. Drop by rounded teaspoonfuls onto ungreased baking sheet.
  10. Bake at 325 for 7 to 9 minutes or until golden brown around edges and slightly moist in center.
  11. Cool 3 to 5 minutes before removing to paper towels.
