banana orange cookie drops

Please use over ripe bananas , well mashed in this recipe as that is where you find the great flavor of banana. This recipe is from Land O'Lakes- butter box. My kids just loved these when they were small- and still like them now-- I have so many cookie recipes that every once in awhile I have to go back and see what one I haven't made in awhile. I think you will enjoy this cookie!

Ingredients

  • COOKIE:
  • 3/4 cup butter,softened
  • 3/4 cup brown sugar, firmly packed
  • 1 cup mashed ripe bananas(about 2)
  • 1 large egg
  • 2 teaspoons fresh grated orange zest
  • 1/2 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1/2 teaspoon each-baking powder and baking soda
  • 1/4 teaspoon salt
  • FROSTING:
  • 2 tablespoons butter, cold
  • 3 tablespoons brown sugar, firmly packed
  • 2 tablespoons half & half , or milk
  • 1 1/4 cups powdered sugar
  • 1/2 teaspoon vanilla extract
  • - grated orange zest for garnish,if desired

How To Make banana orange cookie drops

  • Step 1
    Heat oven to 350^. Combine the butter and sugar in a large bowl. Beat at medium speed,until creamy. Add bananas, egg, orange zest and vanilla; continue beating until well mixed. Reduce speed to low, add flour, baking powder , salt and baking soda. Beat until well mixed. Chill dough for 20 minuted.
  • Step 2
    Drop dough by rounded teaspoonfuls, 2 inches apart, onto UNgreased cookie sheets. Bake 8 to 10 minutes--just until the edges begin to lightly brown. Cool completely on paper bag.
  • Step 3
    Frosting: Melt butter in a small saucepan over medium heat. Add brown sugar and 1/2 & half. Continue cooking, stirring occasionally, until mixture boils. Remove from heat. Add powdered sugar and vanilla; beat until well mixed; Cool slightly. Frost cooled cookies. Garnish with orange zest. Let stand until frosting sets.
