almond- soy peanut butter cookies
I was trying to create a dessert that I could eat without guilt, & came up with this recipe. I did not make them real large to keep the calories & carb count to a minimum. These cookies literally melt in your mouth when you bite into them, & the best part is there is only 1 gram of sugar per cookie, & just 2 net carbs each, & each cookie is under a hundred calories. I did make one batch by drop teaspoon, but refrigerated the remaining batter, & prefer the smoother texture cookie after they have been rolled & pressed with a fork before baking. Both methods work dropped or chilled & rolled

MAKES 72 COOKIES 6 DOZEN
Ingredients
- 2 cups almond flour
- 1/2 cup soy flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 teaspoons baking soda
- 1 tablespoon mexican vanilla or use regular vanilla extract
- 2 large eggs, room temperature
- 2 cups splenda or zero calorie sweetener
- 1 cup creamy peanut butter
- 1 cup softened butter, (2 sticks)
- 3/4 cup lightly salted chopped peanuts

Step 1These are the main flours for this recipe. Use room temperature ingredients for better results. Preheat oven to 350 degrees F.

Step 2Combine both flours with the salt, baking soda, & baking powder, & chopped peanuts in a medium size bowl, then whisk together to blend ingredients.

Step 3In a larger bowl add the softened butter, eggs, peanut butter, zero calorie sweetener and vanilla.

Step 4Beat until batter is creamy and smooth. You can drop by teaspoon onto a greased cookie sheet, but I prefer to chill the batter at least 1/2 hour to 45 minutes or longer to firm up the dough.

Step 5Once dough is chilled, pull off enough dough and shape into a round ball about the size of 2 teaspoons. Place on greased cookie sheet, and press lightly with fork tines.NOTE: I PREFER TO USE AIR BAKE COOKIE SHEET PANS. Then Bake in preheated 350 F. degree oven for 12 minutes, or until lightly browned around the edges.

Step 6Remove cookies to a wire rack to cool completely. Serve as desired. They are so delicious and tasty.
