Zucchini Brownies with Chocolate Frosting

These are an old family favorite and help me use up all the extra zucchini I seem to have every year. I hope you enjoy them as much as we have. If you don't want to frost them, you don't have to, just sprinkle on some powdered sugar.

Ingredients

  • 1 c
    margarine or butter
  • 1 1/2 c
    sugar
  • 2 large
    eggs
  • 1/2 c
    plain yogurt
  • 1 1/2 tsp
    vanilla extract
  • 2 1/2 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1/3 c
    cocoa powder
  • 1/2 tsp
    salt
  • 2 c
    fresh zucchini
  • CHOCO-FROSTING

  • 2 Tbsp
    margarine or butter
  • 2 1/2 oz
    cocoa powder
  • 2 1/2 c
    confectioners' sugar
  • 1/4 c
    milk
  • 1 tsp
    vanilla extract
  • 1 c
    chopped walnuts or pecans

How to Make Zucchini Brownies with Chocolate Frosting

Step-by-Step

  1. Pre-heat oven to 350 degree's . Spray a 13X9 pan with cooking spray. Set aside.
  2. In a large mixing bowl cream butter and sugar till light and fluffy.
  3. Add eggs one at a time beating well after each one.
  4. Beat in yogurt and vanilla.
  5. In a separate medium bowl add the last 4 dry ingredients and combine with a fork or whisk.
  6. Add dry ingredients gradually to wet chocolate mixture . Beat lightly do not over mix !
  7. STIR, do not mix, in Zucchini until well distributed. Use a gentle folding motion.
  8. Pour into prepared pan and bake.
  9. When done set aside to cool and then frost.
  10. ***CHOCOLATE FROSTING***
  11. In a small sauce pan melt chocolate and butter over low heat until melted and smooth. You may also use the microwave.
  12. Cool to room temperature
  13. Pour chocolate mixture into large bowl and add last 3 ingredients.
  14. Beat until nice and smooth and glossy.
  15. Frost brownies, I then sprinkle mine with chopped walnuts but it is optional. ENJOY !!!
