peg's famous black bean brownies

I finally had my first taste of black bean brownies and was hooked. This recipe was given to my by my doctor and she said they got it from the Farmer's Almanac 2016. So, I don't know if they tweaked anything or not but here it is. Now, these are more cake like brownies but incredibly yummy considering that they are made of beans. Since then, I've tried another recipe that I really enjoy as well.

Ingredients

  • 1 can black beans, canned, drained & rinsed off
  • 3 large eggs
  • 1/4 cup cocoa, unsweetened
  • 3/4 cup sugar
  • 3 tablespoons vegetable oil
  • 1/2 teaspoon baking powder
  • - pinch of salt
  • 1/2 cup dark chocolate chips
  • 1/2 cup chopped walnuts (optional)

How To Make peg's famous black bean brownies

  • Step 1
    Preheat oven to 350 degrees and grease and 8 by 8 inch pan. Put the first 7 ingredients into a blender or food processor and blend till smooth.
  • Step 2
    Transfer to a bowl and stir in the chocolate chips & walnuts.
  • Step 3
    Pour into your pan & bake 35 to 40 minutes or till a tooth pick inserted comes out clean.
  • Step 4
    Let cool in the pan and then slice. Add a little powdered sugar on top if desired. These are a really gooey brownies.
