mississippi mud cake
This delicious cross between brownies and chocolate cake was served at a company potluck, and was unsurprisingly completely devoured. I begged for the recipe, which is faithfully reproduced here. Enjoy this obscure but delightful southern secret!

Ingredients
- 1 cup shortening
- 2 cups sugar
- 4 - eggs, beaten
- 1 1/2 cups plain flour
- 1/3 cup cocoa
- 1 1/4 teaspoons salt
- 3 teaspoons vanilla
- 1 cup walnuts, chopped
- 1 sm bag mini marshmallows
- ICING
- 1 1/2 sticks butter
- 1/3 cup cocoa
- 1 box 10x powdered sugar
- 1 teaspoon vanilla
- 1 cup walnuts, chopped
- 1/2 cup evaporated milk
How To Make mississippi mud cake

Step 1Preheat oven to 300°, and grease 9x12 inch pan.

Step 2Cream shortening, sugar, and eggs.

Step 3Sift flour, cocoa, and salt.

Step 4Add flour mixture to shortening, then add walnuts, mix well.

Step 5Pour mixture into pan, and bake for 35 min.

Step 6Icing: Use double boiler to melt butter and cocoa; add evaporated milk, and powdered sugar.

Step 7Cook icing on medium heat, stirring intermittently until smooth, then turn down to low and let simmer while cake is baking.

Step 8Remove cake from oven, spread marshmallows on top, and bake an additional 20 min.

Step 9Add vanilla to icing, stir until well mixed. Add walnuts and stir until well mixed.

Step 10Put icing on cake immediately upon removal and cover marshmallows completely.
