lisa’s zucchini brownies

I don't know about you but I got TONS of zucchini in my garden, these are so easy to make and super moist and they freeze really well too. And you wouldn't know there was zucchini in them either, great way to hide the veggies too. This recipe makes 2 dozen brownies.

Ingredients

  • WHAT YOU NEED
  • - 4 eggs
  • - 1 1/2 cups vegetable oil
  • - 2 cups sugar
  • - 2 cups flour
  • - 2 tsp baking soda
  • - 2 tsp cinnamon
  • - 1 tsp salt
  • - 1/4 cup unsweetened cocoa powder
  • - 1 tsp vanilla
  • - 3 cups zucchini shredded
  • - 1 cup chopped pecans or walnuts

How To Make lisa’s zucchini brownies

  • Step 1
    Preheat oven to 350. Cream together eggs, oil, and sugar. In a separate bowl, mix together flour, baking soda, cinnamon, salt, and cocoa. Slowly add the flour mixture to your sugar mixture, mix well. Add vanilla, zucchini and nuts and mix well. Spread into a 9x 13 pan and Bake for 30 min or till centre is set. Once cool you can frost them with Vanilla Frosting or a Cream Cheese Frosting Enjoy
