freakin' awesome paleo (inspired) brownies
Okay, you purist's this is not really Paleo because we use raw sugar instead of honey, or fruit to sweeten this, but it is gluten and casein free and we make it grain free - so change it if you want or whatever- we like it :) This is my daughter Maxine's recipe- she has perfected it till its decadent and "Freakin' Awesome"! We like it best with just almond meal because its gooey and fudgey, if that's too gooey for you replace some of the almond meal with coconut flour till it's just how you like it. If you prefer crispier edges use all coconut flour.

Ingredients
- 2/3 cup organic raw cocoa powder
- 2 cups unblanched almond meal or coconut flour (or any combination of the two)
- 1/2 teaspoon sea salt
- 1/2 teaspoon xanthan gum
- 1/2 teaspoon aluminum free baking powder
- 2 cups raw sugar
- 3/4 cup melted coconut organic oil
- 3 - free range or organic eggs
- 2 teaspoons pure vanilla extract
- 3/4 cup organic or natural peanut butter *optional
How To Make freakin' awesome paleo (inspired) brownies

Step 1Preheat the oven to 350 F - grease a 13"x9" size pan. Or use parchment paper.

Step 2Mix dry ingredients including sugar.

Step 3Add wet ingredients, mixing well.

Step 4Pour into a prepared pan. Bake for 20-25 minutes or until the sides pull away from the pan and the top cracks.
