Toward the end of summer, the Woodward Hotel would serve the most incredible, warm apple/zucchini/spice cake dripping with a rich caramel butter sauce. Made from farm-fresh local ingredients, it was the perfect ending to a delicious meal and signaled the very beginning of the summers harvest.
Cream shortening and add sugar. Add egg and vanilla. Then add baking soda, baking powder, salt, cinnamon and nutmeg (or cloves).
2Add flour. Stir in apples, zucchini and nuts with a spoon.
3Place batter into a prepared 8" square baking pan. Bake at 350 degrees for 45-50 minutes until tests done with a toothpick.
4Caramel Butter Sauce:
Melt butter in medium saucepan. Add sugars and cream. Bring to a very gentle boil. Turn heat to low. Simmer stirring occasionally, uncovered, for 15 minutes. Remove from heat and add vanilla. Spoon generously over warm cake.
