sugar free cherry almond cake
I have a huge sweet tooth and I'm always looking to satisfy it with alternative sugars. I really love Pilsbury sugar free mixes and I use them as a spring board for baking different desserts. I added cherries, coconut and a few extra things to give this a yummy flavor. My sugar free doesn't mean fat free! I hope you enjoy it.

Ingredients
- 1 box sugar free pilsbury yellow cake mix
- 3 - eggs
- 2 teaspoons almond extract
- 1/2 cup sour cream
- 1 cup evaporated milk
- 1 stick unsalted butter melted
- 1 bag frozen cherries (thawed and chopped)
- 1/2 cup unsweetened flaked coconut
- 1 - 8 oz. cream cheese
- 1/2 cup swerve confectioners sugar replacement
- - 1 or 2 drops red food coloring (optional)
How To Make sugar free cherry almond cake

Step 1Pour cake mix in mixing bowl and add eggs, sour cream and milk, mix.

Step 2Add almond extract, melted butter and mix.

Step 3Add Coconut, chopped cherries and stir until combined.

Step 4Pour into a greased 9 x 13 pan. Bake on 350 for 20-30 min. or according to box directions. When done let cake cool before icing.

Step 5Mix softened cream cheese with swerve sugar replacement and add a couple of drops of red food coloring (optional). Ice cake and enjoy!

Step 6If you like whipped cream. Mix a pint of heavy whipping cream with 1-2 tablespoons of swerve confectioners sugar replacement.
