This cake is light, cool and delicous. Especially good in the summertime. It is also a pretty cake.

1 box duncan hines butter cake mix
1/2 cup canola oil
4 - eggs
1/4 cup sugar
1 can mandarin oranges and juice
ICING
1 box 9 oz. cool whip
1 large can crushed pineapple
1 package instant vanilla pudding mix, 3 oz.

How To Make southern pea pickin' cake

Step 1

For Cake: Mix ingredients together and bake in 4 layers at 325 degrees for 15-20 minutes or until done.

Step 2

For Icing: Mix pineapples, pudding mix and add cool whip and stir. Spread between layers and on top. Keep refrigerated. Delicious!
