Lite Sour Cream Coffee Cake

Kimberly Biegacki

The is a steamed cooked cake in the Ninja Cooking System. It is light, springy and flavorful cake. Because of the steam cooking this cake uses less sugar and butter but still is so yummy. It is a much 'LITER' version compared to other coffee cakes.

I was very happy with the outcome of my first steamed cooked cake. My 3 nephews enjoy this cake but especially my youngest nephew Noah; he loves it!

He loves it so much he asked me to make it for his health class presentation food item. He ended up with an A+ 100% grade and they all loved it!

How to Make Lite Sour Cream Coffee Cake

  1. Ninja Cooking System ---
Stir flour, baking powder, baking soda, and salt in bowl.
Now in another bowl add butter, brown sugar, and egg in bowl and beat with electric mixer until creamy. Stir in sour cream, milk and vanilla. Once combined add your flour mixture and mix with a large spoon till combined.
  2. Spray the multi-purpose pan with cooking spray and pour your batter in. Sprinkle with graham cracker crumbs. (I used boxed graham cracker crumbs, cinnamon and a little sugar.)
  3. Pour the water into the pot and place the roasting rack down inside pot. Now put the multi-purpose pan on the rack. Set OVEN to 400 degrees F for 45 minutes. Cover and cook until cooked through and edges are lightly browned.
  4. Remove pan from the cooking pot and put on a rack to cool. Flip pan over and remove cake. Cut and serve how you desire. We put a little whipped topping and a drizzle of caramel sauce.
