I got this recipe years ago from my good friend and co-worker while I was living in WA state.

However I never wrote down the actual title of the recipe. Finding it years later in my recipe box, I decided to make it to find out what it was and gave it a name.

Ingredients

3/4 c
all purpose flour
3 oz
box vanilla pudding, not instant
1 tsp
baking powder
1/2 tsp
salt
1
egg
3 Tbsp
butter, melted
1/2 c
milk
8 oz
cream cheese, softened
1/2 c
sugar
1 can(s)
peaches, canned in heavy syrup,sliced-do not drain right away
3 Tbsp
peach syrup
cinnamon, optional

How to Make Scott's Just Peachy Dessert

Step-by-Step

  • 1Set oven to 350*. Grease a 9-10 inch pie plate and set aside. I used a deep dish just so nothing ran off the sides.
  • 2Combine the first 7 ingredients with a hand mixer. Pour into your greased pie plate. Bake for 30-35 min. The cake will be golden in color, a little brown around the edges.
  • 3Meanwhile, combine the cream cheese, sugar and 3T of the peach syrup and mix together. You can now drain the peaches. Discard the remaining syrup.
  • 4After the cake has cooled (will be a bit dense), spread the cream cheese mixture on top. Then top with the peaches from the can. Sprinkle cinnamon if you wish. Enjoy!
