Ingredients
- 2 large eggs
- 1 cup white granulated sugar
- 1/2 cup milk on hand; heated to boil
- 1 tablespoon butter or margarine melted in the hot milk
- 1 cup sifted flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- COCONUT ICING
- 9 tablespoons brown sugar
- 5 tablespoons butter or margarine
- 5 tablespoons cream or carnation milk
- 1 cup flaked coconut
How To Make rita's lazy daisy cake 1960

Step 1Beat 2 eggs well ADD 1 cup of sugar continue beating, ADD vanilla the hot milk and butter to egg/sugar mixture

Step 2Sift the dry ingredients together ADD to wet mixture Combine well but DO NOT overbeat.

Step 3Butter an 8x8 pan Pour mixture into pan BAKE IN A 350 oven 30 minutes or until light brown REMOVE FROM OVEN PUT OVEN TO BROILER

Step 4ICING: Combine all ingredient and and boil on stove for 3 or 4 minutes POUR over hot cake. RETURN TO OVEN TO BROWN. WATCH CAREFULLY NOT TO BURN THE TOPPING.
