This recipe is from the 1960 St. Paul's Church, Cook Book.
It is a family favorite, easy to make, with little clean up at the last minute when we just have 'TO EAT CAKE".

Ingredients

Add to Grocery List

2 large
eggs
1 c
white granulated sugar
1/2 c
milk on hand; heated to boil
1 Tbsp
butter or margarine melted in the hot milk
1 c
sifted flour
1 tsp
baking powder
1/4 tsp
salt

COCONUT ICING

9 Tbsp
brown sugar
5 Tbsp
butter or margarine
5 Tbsp
cream or carnation milk
1 c
flaked coconut

How to Make RITA'S LAZY DAISY CAKE 1960

Step-by-Step

  • 1Beat 2 eggs well
    ADD 1 cup of sugar continue beating,
    ADD vanilla the hot milk and butter to egg/sugar mixture
  • 2Sift the dry ingredients together
    ADD to wet mixture
    Combine well but DO NOT overbeat.
  • 3Butter an 8x8 pan
    Pour mixture into pan
    BAKE IN A 350 oven 30 minutes or until light brown
    REMOVE FROM OVEN
    PUT OVEN TO BROILER
  • 4ICING: Combine all ingredient and and boil on stove for 3 or 4 minutes
    POUR over hot cake.
    RETURN TO OVEN TO BROWN.
    WATCH CAREFULLY NOT TO BURN THE TOPPING.
