reethy's family favorite spiced prune cake
My mom loves Prune Cake, for her birthday this year, I tried and failed a couple of recipes. By the time of her 76th birthday weekend, I had a cake to present to her. She was surprised and happy. My mom also gobbled down 2 nice size pieces. I think this one is a HIT ! ENJOY !

Ingredients
- BEFORE MIXING THE CAKE, CHOP PRUNES. IN POT HEAT PRUNE JUICE UNTIL BOILING. BOIL 5 MIN. CUT OFF HEAT, AND ADD PRUNES TO LIQUID. PUT LID ON POT , AND LET COOL
- 1/2 cup prune juice
- 1 cup prunes, chopped and cooked in prune juice (processed in blender)
- DRY INGREDIENTS
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon clove, ground
- 1/4 teaspoon allspice, ground
- 1/2 cup sugar
- WET INGREDIENTS
- 1 cup butter milk
- 1 cup oil
- 2 medium eggs
- 1 tablespoon vanilla extract
- OPTIONAL
- 1 cup walnuts chopped

Step 1In pot add prunes and water,bring to boil. simmer for 5 minutes.Let cool

Step 2Add prunes and liquid to blender, blend well

Step 3Sift and add all dry ingredients in mixing bowel, mix well

Step 4Add eggs,milk,oil,vanilla mix until batter is all wet.

Step 5Add prunes to wet batter, mix well

Step 6Pour batter in prepared pan, Bake at 350 for 40-50 minutes, or until toothpick is clean after incerting in center.

Step 7When done, removed from oven and let cool completely. ENJOY !
