My mom loves Prune Cake, for her birthday this year, I tried and failed a couple of recipes. By the time of her 76th birthday weekend, I had a cake to present to her. She was surprised and happy. My mom also gobbled down 2 nice size pieces. I think this one is a HIT !

Ingredients

  • BEFORE MIXING THE CAKE, CHOP PRUNES. IN POT HEAT PRUNE JUICE UNTIL BOILING. BOIL 5 MIN. CUT OFF HEAT, AND ADD PRUNES TO LIQUID. PUT LID ON POT , AND LET COOL

  • 1/2 c
    prune juice
  • 1 c
    prunes, chopped and cooked in prune juice (processed in blender)
  • DRY INGREDIENTS

  • 2 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 1 tsp
    cinnamon
  • 1/4 tsp
    nutmeg
  • 1/4 tsp
    clove, ground
  • 1/4 tsp
    allspice, ground
  • 1/2 c
    sugar
  • WET INGREDIENTS

  • 1 c
    butter milk
  • 1 c
    oil
  • 2 medium
    eggs
  • 1 Tbsp
    vanilla extract
  • OPTIONAL

  • 1 c
    walnuts chopped

How to Make Reethy's Family Favorite Spiced Prune Cake

Step-by-Step

  1. In pot add prunes and water,bring to boil. simmer for 5 minutes.Let cool
  2. Add prunes and liquid to blender, blend well
  3. Sift and add all dry ingredients in mixing bowel, mix well
  4. Add eggs,milk,oil,vanilla mix until batter is all wet.
  5. Add prunes to wet batter, mix well
  6. Pour batter in prepared pan, Bake at 350 for 40-50 minutes, or until toothpick is clean after incerting in center.
  7. When done, removed from oven and let cool completely.
