peachy yogurt muffins

These muffins are almond filled and very tender.A family favorite- and sure to be a favorite of your family too! Ooey Gooey! Note: This peach yogurt can be changed out with other yogurt to make your favorite flavor muffins!

Ingredients

  • MUFFINS:
  • 1/2 cup melted butter
  • 12 ounces peach yogurt
  • 1 large egg,slightly beaten
  • 2 tablespoons half and half
  • 1/2 teaspoon almond extract
  • 1 teaspoon butter extract
  • 1 2/3 cups all purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 dash salt
  • 1/4 cup almonds, slivered, coarsely chopped
  • GLAZE:
  • 2/3 cup powdered sugar
  • 1/4 teaspoon almond extract
  • 2 to 3 teaspoons water

How To Make peachy yogurt muffins

  • Step 1
    Heat oven to 400^. Fit paper baking cups into 12 muffin pan cups or grease (spray) the cups. Set aside. (I prefer not using the papers) Muffins: Combine margarine,yogurt, egg,half and half, almond and butter extract in large bowl. Combine flour, sugar, baking powder, baking soda and salt in medium bowl.
  • Step 2
    Stir flour mixture into butter mixture just until moistened. Stir in almonds. Spoon batter evenly into prepared muffin pan cups. Bake for 16 to 19 minutes or until tested done with a toothpick. Cool 5 minutes in pan; remove to wire cooling rack.
  • Step 3
    Glaze: Combine ingredients and enough of the milk for desired glazing consistency, Spoon glaze mixture over warm muffins.
