Ingredients

1 1/3 c
flour
1 1/3 c
sugar
3
eggs
3/4 c
milk
1/2 c
olive oil
1/4 c
heavy cream
2 Tbsp
orange zest
1 tsp
yeast
1/2 tsp
sea salt

SYRUP

1
orange
3 c
orange juice
1/2 c
sugar

TOPPING

1/3 c
pine nuts

orange segments

Step-By-Step

1Preheat oven to 400 degrees
brush 8 inch cake pan with olive oil and dust with flour mixed with sugar
2Beat eggs with sugar for 4 min
add milk olive oil , cream and zest
3mix flour yeast and salt together
then incorporate into batter mix well
let batter rest 20 min
4pour batter into pan bake 30 min till toothpick inserted n center comes out clean let cool and remove from pan
5for syrup...remove zest from orange . place zest sugar and orange juice in pan ...heat and cook till thickened about 1 hour
6strain syrup and pour over cake allow to soak in
7lightly toast pine nuts
8arrange orange segments on cake and sprinkle with pine nuts
