Ingredients For old fashioned plum & coconut slice

  • 1/2 cup butter, softened
  • 1/4 cup caster sugar (super fine)
  • 1 ts vanila
  • 1 egg
  • 1/2 cup plain flour
  • 3/4 cup self raising flour
  • 1/4 cup almond meal
  • 1/2 cup plum jam - warmed for ease of spreading
  • CRUNCHY COCONUT TOPPING
  • 1/4 cup butter
  • 1/4 cup caster sugar (super fine sugar) extra
  • 1 egg
  • 2 tb self raising flour
  • 1 3/4 cups un-sweetened shredded coconut

How To Make old fashioned plum & coconut slice

    Pre-heat oven to 200oc/400oF. Well grease a 18 x 28 cm slice pan (7x11 inch). Line with baking paper.

    To make the base: beat the sugar, vanilla, butter and egg until well combined and creamy. Add in the flours, meal and milk. Stir to combine. Spread into the prepared pan and top with the warmed jam, carefully spreading all over and getting into all the corners.

    To make the topping: Beat the butter and sugar until light and fluffy, add the egg and beat again. Stir in the flour and coconut. Carefully spread over the jam layer.

    Bake for 10 minutes and reduce heat to 160oC (320oC) for a further15 - 20 minutes or the top is golden. Stand in the tin for 30 minutes before slicing.
