Ingredients
- CAKE:
- 1 1/2 cups boiling water
- 1 cup oatmeal (old fashioned or quick)
- 1/2 cup (1 stick) butter
- 2 - eggs, beaten
- 1 cup brown sugar
- 1 cup white sugar
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon vanilla extract
- 1 1/3 cups all purpose flour
- FROSTING:
- 1/2 cup (1 stick) butter
- 1/2 cup white sugar
- 1/4 cup cream
- 1 to 2 cups shredded coconut
- 1 cup chopped walnuts (may use pecans if preferred)
- 1 teaspoon vanilla extract
How To Make oatmeal cake with coconut walnut frosting

Step 1For The Cake: In a large bowl, pour boiling water over oatmeal and add the butter. Let stand until butter is melted.

Step 2Add all other ingredients. Mix together well.

Step 3Pour into a greased and floured 9x13x2-inch baking pan. Bake in a preheated 350-degree oven for 30 to 35 minutes.

Step 4For The Frosting: Melt the butter in a quart size pan and add sugar and cream. Bring to a boil and cook until it thickens, about 4 minutes.

Step 5Remove from heat and stir in coconut, nuts, and vanilla. Pour over cake and broil in oven until toasty looking. Watch closely.

Step 6Allow cake to cool completely before cutting.
