This cake is to die for, trust me! My mother made one very similar to this but I have never found her recipe. I believe this comes close. It is absolutely melt-in-your-mouth delicious! Recipe: themotherhuddle.com

Ingredients

  • CAKE:
  • 1 1/2 cups boiling water
  • 1 cup oatmeal (old fashioned or quick)
  • 1/2 cup (1 stick) butter
  • 2 - eggs, beaten
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 1 1/3 cups all purpose flour
  • FROSTING:
  • 1/2 cup (1 stick) butter
  • 1/2 cup white sugar
  • 1/4 cup cream
  • 1 to 2 cups shredded coconut
  • 1 cup chopped walnuts (may use pecans if preferred)
  • 1 teaspoon vanilla extract

How To Make oatmeal cake with coconut walnut frosting

  • Step 1
    For The Cake: In a large bowl, pour boiling water over oatmeal and add the butter. Let stand until butter is melted.
  • Step 2
    Add all other ingredients. Mix together well.
  • Step 3
    Pour into a greased and floured 9x13x2-inch baking pan. Bake in a preheated 350-degree oven for 30 to 35 minutes.
  • Step 4
    For The Frosting: Melt the butter in a quart size pan and add sugar and cream. Bring to a boil and cook until it thickens, about 4 minutes.
  • Step 5
    Remove from heat and stir in coconut, nuts, and vanilla. Pour over cake and broil in oven until toasty looking. Watch closely.
  • Step 6
    Allow cake to cool completely before cutting.
