maltese orange cake
From a now-defunct website - A Maltese Mouthful - comes this traditional Maltese orange cake. Almost every home will have a recipe for this cake! In this particular one, Marlene's mom had a unique way of treating the oranges - they are liquified in a blender or food processor! For a more orangey taste, use orange juice instead of milk.

Ingredients
- 1 cup caster sugar (superfine sugar)
- 14 tablespoons butter, softened (1 stick plus 6 Tbsp)
- 3 large eggs, lightly beaten
- 2 cups self-rising flour, sifted
- 2 medium oranges, quartered
- 1/2 cup milk or orange juice
How To Make maltese orange cake

Step 1Preheat the oven to 350 F. Grease a bundt cake pan.

Step 2Place oranges in a food processor and pulse until nearly smooth.

Step 3Cream the sugar and butter. Slowly add in the eggs and beat until well mixed.

Step 4Add the self-rising flour, whizzed-up oranges, milk or orange juice. Mix well and pour into the prepared Bundt pan.

Step 5Bake for 40-45 minutes. The cake is done when a wooden skewer comes out clean. Let cool in pan for 10 minutes then turn out. Serve with creme fraiche or whipped cream.
