honey cran-cranberry topping

The holidays are a great time to find cranberries in abundance and with the addition of honey this recipe is bound to please the hardened cranberry lover in all of us. This topping has many uses and even the children in our family love this topping. It's varied and many uses makes it an ideal topping.

Ingredients

  • 1 cup honey
  • 1/2 teaspoon salt
  • 1 1/2 cups cranberry juice
  • 1 cup dried cranberries
  • 12 ounces package fresh or frozen cranberries (a generous 3 cups)

How To Make honey cran-cranberry topping

  • Step 1
    Bring the honey, salt, and cranberry juice to a boil in a medium saucepan. Stir in the dried cranberries, and simmer for about 5 minutes. Add the fresh or frozen cranberries, and simmer, stirring occasionally, for 5 to 7 minutes, until some of the berries have burst and the juices have cooked down and thickened.
  • Step 2
    Remove the cranberries from the heat, spoon into a bowl, and chill. NOTE: Use this topping for, Pancakes, French toast, Ice Cream, and Yogurt, and it is delicious as a filling for cakes, cupcakes, breakfast bars, coffee cakes and doughnuts.
