Ingredients
- CAKE:
- 18 ounces yellow cake mix
- 1/2 cup vegetable oil, i use crisco oil
- 4 large eggs
- 11 ounces can mandarin oranges plus juice
- ICING:
- 9 ounces tub of cool whip, thawed
- 6 ounces pkg. instant vanilla pudding
- 20 ounces can crushed pineapple plus juice
- 1/2 cup sweetened coconut

Step 1Cake: can be 3 layer cake--9x13 cake or cupcakes. Mix all ingredients together with mixer. Cut parchment paper to fit three 8-inch cake pans and spray the paper; pour batter equally into the pans. Bake at 350^ for 20-25 minutes. Let stand for 3 minutes then remove and cool on wire racks . --- Icing: Combine Cool Whip, juice from pineapple and dry pudding mix with a mixer- beat until consistency to spread, about 5-8 minutes. Fold in coconut,and remaining pineapple ; blend with spatula. Spread between layers and frost sides and top of cake. Refrigerate any leftovers. --- NOTE: This cake can be made in a 9x13-inch baking pan or into cupcakes and frost each one- great for a party. Bake cupcakes 15-20 minutes. Bake 9x13-inch cake 30-35 minutes.
