1Cake: can be 3 layer cake--9x13 cake or cupcakes.
Mix all ingredients together with mixer. Cut parchment paper to fit three 8-inch cake pans and spray the paper; pour batter equally into the pans. Bake at 350^ for 20-25 minutes. Let stand for 3 minutes then remove and cool on wire racks .
Combine Cool Whip, juice from pineapple and dry pudding mix with a mixer- beat until consistency to spread, about 5-8 minutes. Fold in coconut,and remaining pineapple ; blend with spatula. Spread between layers and frost sides and top of cake. Refrigerate any leftovers.
This cake can be made in a 9x13-inch baking pan or into cupcakes and frost each one- great for a party.
Bake cupcakes 15-20 minutes.
Bake 9x13-inch cake 30-35 minutes.
