double chocolate coca-cola cake

This is Robyn Long's recipe and photo from Facebook. Had this at a picnic recently and let me tell you, it was the most moist, delicious, fudgy chocolatey thing I have wrapped my lips around in a looong time! I recently added 1/4 teaspoon of instant coffee to the cake batter and the frosting, and it really kicked up the chocolatey flavor.

Ingredients

  • CAKE:
  • 1 cup coca cola, regular
  • 1/2 cup oil
  • 1 stick butter, softened
  • 3 tablespoons cocoa powder
  • 2 cups sugar
  • 2 cups flour
  • 1/2 teaspoon salt
  • 2 - eggs
  • 1/2 cup buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla
  • FROSTING:
  • 1 stick butter
  • 3 tablespoons cocoa powder
  • 3 ounces whipping cream
  • 1 teaspoon vanilla
  • 3 3/4 cups confectioners sugar

How To Make double chocolate coca-cola cake

  • I mix 1 tablespoon flour/1 tablespoon cocoa to coat the greased pan.
    Step 1
    CAKE: Preheat oven to 350 degrees. Grease and flour a 13 x 9 inch baking pan.
  • Make sure to bring coca-cola mixture to a full boil and add to flour mixture.
    Step 2
    In a saucepan, mix Coca Cola, oil, butter and cocoa and bring to a boil. In another bowl, combine the sugar, flour and salt. Pour the boiling Cola mixture over the flour mixture and beat well. Add the eggs, buttermilk, soda and vanilla and beat well.

    Step 3
    Spread mixture into the prepared pan and bake for 25 to 45 minutes or until it springs back in the middle when lightly touched with your finger. Remove pan from oven. Prepare frosting while allowing cake to cool for about 10 minutes before frosting.
  • Step 4
    FROSTING: Frosting: In a saucepan, combine the butter, cocoa, and milk. Heat until the butter melts. Beat in the remaining ingredients and spread on the cake while it's still warm. Enjoy!
