Ingredients
- 2 1/2 cups flour
- 3/4 cup granulated sugar
- 2 tablespoons poppy seed
- 1 tablespoon baking powder
- 1 cup fat free (skim) milk
- 1/2 cup fleischman's margarine, melted
- 1/4 cup egg beaters
- 1 teaspoon vanilla extract
- 2 teaspoons grated lemon peel
- 1 teaspoon lemon juice
- 1 cup fresh or frozen cranberries, chopped ,uncooked
- GLAZE:
- 1 cup powdered sugar
- 5-6 teaspoons lemon juice
- 1/2 teaspoon corn syrup, light
- 1/2 teaspoon butter or margarine
How To Make cranberry poppy seed loaf

Step 1In a large bowl, combine flour, sugar, poppy seed, and baking powder; set aside. In a small bowl, combine milk, margarine, egg, vanilla and lemon peel. Stir milk mixture into flour mixture just until moistened. Stir in cranberries. Spread batter into greased 8x4-inch loaf pan. Bake at 350^ for 60 to 70 minutes or until tested done. Cool in pan on wire rack. Combine glaze ingredients in a small bowl and mix until smooth.
