Ingredients

  • 2 1/2 cups flour
  • 3/4 cup granulated sugar
  • 2 tablespoons poppy seed
  • 1 tablespoon baking powder
  • 1 cup fat free (skim) milk
  • 1/2 cup fleischman's margarine, melted
  • 1/4 cup egg beaters
  • 1 teaspoon vanilla extract
  • 2 teaspoons grated lemon peel
  • 1 teaspoon lemon juice
  • 1 cup fresh or frozen cranberries, chopped ,uncooked
  • GLAZE:
  • 1 cup powdered sugar
  • 5-6 teaspoons lemon juice
  • 1/2 teaspoon corn syrup, light
  • 1/2 teaspoon butter or margarine

How To Make cranberry poppy seed loaf

  • Step 1
    In a large bowl, combine flour, sugar, poppy seed, and baking powder; set aside. In a small bowl, combine milk, margarine, egg, vanilla and lemon peel. Stir milk mixture into flour mixture just until moistened. Stir in cranberries. Spread batter into greased 8x4-inch loaf pan. Bake at 350^ for 60 to 70 minutes or until tested done. Cool in pan on wire rack. Combine glaze ingredients in a small bowl and mix until smooth.
