In high school my best friend was 1/2 Italian. Her mom used to make this cake, and I finally got my friend to share the recipe! It took 20 years!

  • FOR THE CAKE:
  • 1/2 c
    butter, softened
  • 1/2 c
    shortening
  • 2 c
    sugar
  • 5 lg
    eggs, separated
  • 2 c
    all-purpose flour
  • 1 tsp
    baking soda
  • 1/4 c
    cocoa powder
  • 1 c
    buttermilk
  • 1 c
    chopped pecans
  • 1 c
    flaked coconut
  • 1 tsp
    vanilla extract
  • CREAM CHEESE FROSTING:
  • 8 oz
    package cream cheese, softened
  • 1/2 c
    butter, softened
  • 16 oz
    package powdered sugar, sifted
  • 1/4 c
    cocoa powder
  • 1/8 tsp
    salt
  • 1/2 c
    chopped pecans
  • 1 tsp
    vanilla extract
  • pecan halves, to garnish

    For the Cake:

    Beat the butter and shortening at medium speed of an electric mixer until fluffy; gradually add the sugar, beating well. Add the egg yolks, one at a time, beating after each addition.

    Combine the flour, baking soda, and cocoa; add to the creamed mixture alternately with the buttermilk, beginning and ending with the flour mixture. Mix after each addition. Stir in the pecans, coconut, and vanilla.

    Beat the egg whites at a high speed until stiff peaks form; fold into the batter. Pour the batter into 3 greased and floured 8 inch round cakepans.

    Bake at 325 degrees for 35 to 40 minutes or until a wooden pick inserted in the center comes out clean. Cool in the pans on wire racks for 10 minutes; remove from pans and let them cool completely on wire racks.

    Spread the cream cheese frosting between the layers and on top and sides of cake. Garnish, if desired, with pecan halves.

    Beat the cream cheese and butter at medium speed of an electric mixer until fluffy.

    Combine the powdered sugar, cocoa and salt. Gradually add to the creamed mixture, beating until smooth. Stir in the pecans and vanilla.
