chocolate italian cream cake with cream cheese fro
In high school my best friend was 1/2 Italian. Her mom used to make this cake, and I finally got my friend to share the recipe! It took 20 years!

Ingredients
- FOR THE CAKE:
- 1/2 cup butter, softened
- 1/2 cup shortening
- 2 cups sugar
- 5 large eggs, separated
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 cup cocoa powder
- 1 cup buttermilk
- 1 cup chopped pecans
- 1 cup flaked coconut
- 1 teaspoon vanilla extract
- CREAM CHEESE FROSTING:
- 8 ounces package cream cheese, softened
- 1/2 cup butter, softened
- 16 ounces package powdered sugar, sifted
- 1/4 cup cocoa powder
- 1/8 teaspoon salt
- 1/2 cup chopped pecans
- 1 teaspoon vanilla extract
- pecan halves, to garnish

Step 1For the Cake:

Step 2Beat the butter and shortening at medium speed of an electric mixer until fluffy; gradually add the sugar, beating well. Add the egg yolks, one at a time, beating after each addition.

Step 3Combine the flour, baking soda, and cocoa; add to the creamed mixture alternately with the buttermilk, beginning and ending with the flour mixture. Mix after each addition. Stir in the pecans, coconut, and vanilla.

Step 4Beat the egg whites at a high speed until stiff peaks form; fold into the batter. Pour the batter into 3 greased and floured 8 inch round cakepans.

Step 5Bake at 325 degrees for 35 to 40 minutes or until a wooden pick inserted in the center comes out clean. Cool in the pans on wire racks for 10 minutes; remove from pans and let them cool completely on wire racks.

Step 6Spread the cream cheese frosting between the layers and on top and sides of cake. Garnish, if desired, with pecan halves.

Step 8Beat the cream cheese and butter at medium speed of an electric mixer until fluffy.

Step 9Combine the powdered sugar, cocoa and salt. Gradually add to the creamed mixture, beating until smooth. Stir in the pecans and vanilla.
