My dad would bring chocolate eclairs to Worship services to have with our coffee. He got where he could not make them so, this is his recipe.

Ingredients

  • CHOCOLATE ECLAIR:
  • 1 cup water
  • 1/2 cup butter
  • 1 cup flour
  • 4 - eggs, room tempature
  • FILLING:
  • 2 packages instant french vanilla pudding
  • 2 1/2 cups milk
  • 1- 8 ounces container cool whip
  • 1 teaspoon vanilla
  • CHOCOLATE SAUCE:
  • 6 ounces simi sweet chocolate chips
  • 1 1/3 cups evaporated milk
  • 1/2 cup butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

How To Make chocolate eclair by eddie

  • Step 1
    CHOCOLATE ECLAIR: 1 Bring to a rolling boil the water and butter, take off heat. Add flour stir with spoon until ball can be formed.
  • Step 2
    Add eggs, beat like crazy mix until dough is very stiff, other wise it will run over the pan.
  • Step 3
    Drop by full teaspoon onto a cookie sheet, for individual servings put in a circular ring or in a strip.
  • Step 4
    Bake 45 to 50 minutes at 400 degrees, cool out of draft
  • Step 5
    FILLING: Mix pudding and milk, mix well. fold in cool whip and vanilla.
  • Step 6
    Slice eclair in half and fill generously with entire amount of filling. Replace top of eclair, drizzle top with chocolate sauce.
  • Step 7
    CHOCOLATE SAUCE: Melt chocolate chips and butter together.
  • Step 8
    Gradually add milk and powered sugar. Bring to a boil for 8 minutes.
  • Step 9
    Remove from heat and add vanilla extract. Makes 3/4 quart.
