This was my grandmother's recipe, and I still remember her feeding it to me in my highchair. (She died when I was two years old.) Throughout my life, my mother always made it, and called it "Nannie's Cake." When I became a mom, I made it for my children, and they loved it. They also called it "Nannie's Cake," so that made it very special!

Ingredients

  • 1 box lemon cake mix
  • 1 box lemon jello (small)
  • 4 eggs
  • 3/4 cup apricot nectar
  • 3/4 canola oil
  • 1 teaspoon lemon extract

How To Make apricot nectar cake ("nannie's cake")

  • Step 1
    Gather all ingredients needed for cake.
  • Step 2
    Combine all ingredients in a large bowl.
  • Step 3
    Mix with mixer for 2 minutes on medium speed.
  • Step 4
    Pour into a greased and floured tube pan.
  • Step 5
    Bake at 350 degrees for 1 hour.
  • Step 6
    Let cool before releasing from pan.
  • Step 7
    Optional: powdered sugar glaze (My family prefers it unglazed.)
