apple-rhubarb dump cake
Rhubarb is the first veg that is available to me in AK and I am always looking for good recipes to use my rhubarb. Last week I bought, "The Joy of Rhubarb: The Versatile Summer Delight" by Theresa Millang ISBN: 978-1-59193-051-8 at the ranger station at Wrangell St. Elias National Park in Alaska. This is the first "treat" I made for the hunky hubby's workplace. I make nice treats for them in the summer when I have time and I always try to use the rhubarb from my garden. Get your copy! Yesterday, I made Cornish Game Hens with Rhubarb Sauce and it was amazing!

Ingredients
- 2 cups rhubarb, chopped
- 2 cups apple pie filling
- 1 cup sugar
- 1 - 3 oz. pkg. strawberry jello
- 1 box white cake mix
- 1 1/2 cups water
- 1/2 cup butter, sliced into small pieces
How To Make apple-rhubarb dump cake

Step 1Preheat oven to 350 F

Step 2Spread rhubarb into a greased 13x9 baking pan. Top with apple pie filling.

Step 3Mix together the sugar and jello.

Step 4Sprinkle the sugar mixture over the top of the rhubarb apple pie mix.

Step 5Top with dry white cake mix, then pour over the water and dot with butter.

Step 6Bake for 50 minutes. Let it sit for an hour before serving. Serve with vanilla ice cream or whipped cream.
