This recipe was my Grandmother's, I remember her going and picking the Dandelion flower making syrup and some dandelion wine.She made salad from the leaves and coffee substitute from the roots She didn't have a recipe she just made it as she went. "Great memories Grandmother. " I added the pears for a different taste

- 4 quarts dandelion flawer
- 1 pound pears chopped
- 1 quart filtered water
- - juice and zest of one limon
How To Make dandelion syrup by eddie grandmother style

Step 1Chop pears and put into a large pot. Add the dandelion flower, lemon juice and zest and then water. Simmer on low for 1 half hour

Step 2Pour the mash through a strainer . Juice should be clear. ( This is important ) weight juice and pour back into the pot . Use the same amount of sugar as the juice weighs.

Step 3Bring the juice to a boil stirring occasionally until thickens, DON"T boil to long. it should not change color.

Step 4Pour the syrup into steral and scalded jars let cool Good on pancakes waffles. Oh so yummy!!
