How to Make Dandelion Syrup By Eddie GrandMother Style
- Chop pears and put into a large pot. Add the dandelion flower, lemon juice and zest and then water.
Simmer on low for 1 half hour
- Pour the mash through a strainer . Juice should be clear.
( This is important ) weight juice and pour back into the pot . Use the same amount of sugar as the juice weighs.
- Bring the juice to a boil stirring occasionally until thickens, DON"T boil to long. it should not change color.
- Pour the syrup into steral and scalded jars let cool
Good on pancakes waffles. Oh so yummy!!
