Is it still a recipe if it uses a mix? The banana imparts a wonderful, subtle creaminess and sweetness to the batter. This works best with bananas that are ripe but not too ripe (have some little brown spots but are not mostly brown), but any banana will do. The recipe is easy to double.

Ingredients

  • 2/3 cup arrowhead mills organic buckwheat pancake & waffle mix
  • 1 - ripe banana
  • 2 teaspoons canola oil
  • 2 teaspoons agave nectar
  • 3/4 cup almond, soy, or other nondairy milk
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinammon
  • 1/4 cup chopped pecans
  • 1/3 cup blueberries

  • Step 1
    Stir all ingredients except blueberries only until lumps disappear.
  • Step 2
    Mix in blueberries.
  • Step 3
    Cook on lightly oiled skillet.
