raspberry parfait
I was just in Minneapolis - home of Prince and purple rain. I was thinking of the song, Raspberry Beret, and decided to have a breakfast in that vein - and Raspberry Parfait was born. It is also healthy - and only 5 Weight Watchers points!

Ingredients
- 1/2 teaspoon butter
- 1/2 cup old fashioned oats
- 1 tablespoon chopped pecans
- 1 tablespoon sliced almonds
- 1 tablespoon unsweetened coconut
- 1 tablespoon honey
- 1 cup raspberries (fresh or frozen)
- 1 cup plain greek yogurt
- 2 sprigs mint - optional for garnish
How To Make raspberry parfait

Step 1If using frozen raspberries, thaw ahead of time or in microwave. If using fresh raspberries, rinse and set aside. You will probably need more berries if using fresh.

Step 2Melt butter in skillet. Add oats through honey. Cook over medium-high heat for about 5 minutes, stirring constantly until starting to turn golden. Remove from heat. Cool.

Step 3Layer yogurt, oat mixture and berries in decorative parfait glasses. Garnish with mint springs.
