parmesan unbread low carb sammie

I made this for lunch today and it was YUMMMMY, this is one of my submissions for my Sandwiches, Sammiches and Sammies group challenge, wish me luck.

Ingredients

  • 1 - tub shredded parmesan cheese (about 6oz)
  • 6 slices turkey breat slices (any lunch meat will do)
  • 3-4 - roasted red peppers (sliced)
  • 1 - ripe roma tomato (use roma if possible cause they are less wet)
  • - lettuce
  • - red onion
  • - besides the parmesan instead of bread all the ingredients are optional and merely suggestions so be creative, go wild! i am thinking fried spam, or tuna, or hummis
  • BAJA SAUCE (OPTIONAL)
  • 1/4 cup sour cream
  • 1/4 cup light mayo
  • 2 teaspoons cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 5-8 - sprigs of cilantro
  • 2 tablespoons pickled jalapeno
  • 1 tablespoon juice from the jalapeno jar
  • - puree the cilantro, jalapeno and jalapeno juice and add to the other ingredients and combine well, stores 3-5 days if kept refrigerated ( or make fish tacos and use it up)
  • - i used a baja sauce i had made this weekend for fish tacos but you could use anything you want, blue cheese dressing, ranch, mayo, nothing?? whatever you like

How To Make parmesan unbread low carb sammie

  • Step 1
    pre heat oven to 350 degrees
  • Step 2
    line your baking pan with parchment paper or a silicone baking sheet
  • Step 3
    Using a large biscuit cutter put 2 heaping tablespoons of parmesan into ring and spread evenly inside ring, carefully remove ring and repeat (1 tub makes 6 - 10cm crisps
  • Step 4
    bake 12-15 minutes until golden brown (my picture was a little under done but they tasted good, just a little soft, so I guess it's your preference as long as it is completely melted)
  • Step 5
    remove from oven and cool completely before constructing your sandwich.
  • Step 6
    load your sandwich but put any sauces in the middle not on the crisps or it will be very messy to eat. ENJOY!
