non-traditional 3-egg western omelette
I just came up with it this morning. a western omelette has finely-chopped potato but I thought the chopped mushrooms and salmon croquettes would be a nice variation.

Ingredients
- 3 eggs
- olive oil, extra virgin
- white or bella mushrooms
- green pepper
- 1/2 onion
- 2 salmon croquettes
- shredded cheddar-jack cheese
- roma tomato
How To Make non-traditional 3-egg western omelette

Step 1Spray skillet with no-stick spray

Step 2pour / cover bottom with olive oil

Step 3add chopped pepper, onion, mushroom to sauté

Step 4add firmer parts of tomato to soften with vegetables

Step 5add chopped croquettes

Step 6after simmering 5-10 minutes add remaining tomato and simmer until soft

Step 7pour in scrambled eggs

Step 8cook until yolk dry enough to add shredded cheese

Step 9allow cheese to melt then fold omelette , turn off heat

Step 10slide omelette onto plate and eat
