Ingredients
- 12 small corn tortillas-chopped in triangles
- 2 tablespoons canola oil
- 1/2 medium yellow onion
- 8 large eggs-scrambled
- 2 tablespoons garlic parsley salt
- 1 cup ham-diced
- 1 cup cheddar cheese, shredded
- 1-4 oz can mild green chiles-no drain
How To Make my mexican breakfast migas

Step 1In a nonstick skillet on Med/high heat, add oil. Add in Corn tortillas. Using a wooden spoon, stir and separate each tortilla. Reduce Heat.

Step 2In a large Bowl, crack eggs, Whisk. Set aside. Dice up Ham and Onion. Add to Whisked eggs. Stir to combined. Add in Chilies.

Step 3Turn up heat in skillet again. Add in egg, ham and onion. Scramble until eggs are done, and ham and onion are heated through.

Step 4Sprinkle in Garlic Parsley Salt and cheese. Toss to combined. Serve with salsa or sour cream.
